Vegan Pistachio Cannoli


💚2 tortilla wraps
💚2 tbsp sunflower oil
💚2 tbsp granulated sugar
💚1 tsp ground cinnamon
💚150g cream cheese
💚1 tbsp lemon juice
💚6 tbsp icing sugar
💚1/2 tsp vanilla extract
💚50g pistachios


1. Preheat the oven to 180c
2. Use a 3” cookie cutter (or similar) to cut the wraps into 6 smaller circle shapes.
3. Use a toothpick to assemble each circle into a wrap shape and to keep it in place, then brush them with oil and sprinkle over the sugar and cinnamon
4. Bake for 15 minutes until hard and allow to cool, then remove the toothpicks
In the meantime mix all the ingredients apart from the pistachios together and use a piping bag to pipe in the cream cheese mixture
5. Dip each end into the chopped pistachios then refrigerate and enjoy!
