I don’t know why I have never tried Oreos in my banana bread before – absolute game changer! I can’t wait for you to all try this one.

Ingredients
Wet
- 5 small bananas (or 4 medium)
- 50g granulated sugar
- 60g dark brown soft sugar (coconut will also work)
- 80g sunflower oil
- 1 tsp vanilla extract
- 2 flax eggs (2 tbsp ground flax seed mixed with 5 tbsp of water – set aside for 10 minutes)
Dry
- 270g plain flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 100g Oreos, crushed
Method
- Preheat your oven to 180c and line or grease a loaf tin
- In a bowl, mash your bananas using a fork, then stir in the remaining ‘wet’ ingredients
- In another bowl, combine the flour, baking powder, baking soda and cinnamon. Stir to combine then pour in the wet mixture
- Combine using a spatula then fold in the crushed oreos
- Place in the oven and bake for 45-60 minutes, until a toothpick comes out clean. Once ready, remove from the oven and allow to cool in the loaf tin for 10 minutes, then transfer to a cooling rack and leave to cool completely
- Slice and enjoy!
