
Ingredients
Salad ingredients –
š„ 120g cooked quinoa
š„ 2 inch cucumber, diced
š„ 12 cherry tomatoes, halved
š„ 1 handful of parsley, chopped
š„ 1 handful of mint, chopped
š„ 1 aubergine, fried in a little oil
Dressing ingredients –
š„ 100g yogurt
š„ 1 tbsp tahini
š„ Juice from 1/2 lemon
Method
1. Combine the salad ingredients in one bowl and set aside
2. Combine the dressing ingredients in another bowl, making sure to stir until well combined. Add 2 tbsp of water if you want to drizzle it or leave it how it is if youād rather dollop
3. Serve the salad with the creamy dressing and enjoy!
