Aubergine Tabbouleh Salad


Salad ingredients –
🥗 120g cooked quinoa
🥗 2 inch cucumber, diced
🥗 12 cherry tomatoes, halved
🥗 1 handful of parsley, chopped
🥗 1 handful of mint, chopped
🥗 1 aubergine, fried in a little oil
Dressing ingredients –
🥛 100g yogurt
🥛 1 tbsp tahini
🥛 Juice from 1/2 lemon


1. Combine the salad ingredients in one bowl and set aside
2. Combine the dressing ingredients in another bowl, making sure to stir until well combined. Add 2 tbsp of water if you want to drizzle it or leave it how it is if you’d rather dollop
3. Serve the salad with the creamy dressing and enjoy!
