Orzo and tomato bake

I love this recipe! It is super simple and the beauty of it is you can really make it your own by adding olives, chickpeas, peppers etc!


  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves of garlic, chopped
  • 1/2 a red chilli, chopped
  • 1 pepper, chopped
  • 2 handfuls of spinach
  • 350ml vegetable stock
  • 1 400g tin of tomatoes
  • 220g dry orzo
  • 1 tbsp tomato puree
  • 1 tsp oregano
  • 1/2 tsp cayenne pepper


  1. Preheat the oven to 180c
  2. Heat the oil in the pan and fry the onion and garlic until they begin to turn soft, then add the pepper and chilli
  3. Continue to cook down for another couple of minutes, then add the remaining ingredients and stir
  4. Bring to a boil then transfer to an ovenproof dish. Cook in the oven for 15 minutes and top with anything you like! (Feta, sausages and parsley is what I went for!)
