I love this recipe! It is super simple and the beauty of it is you can really make it your own by adding olives, chickpeas, peppers etc!

Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 3 cloves of garlic, chopped
- 1/2 a red chilli, chopped
- 1 pepper, chopped
- 2 handfuls of spinach
- 350ml vegetable stock
- 1 400g tin of tomatoes
- 220g dry orzo
- 1 tbsp tomato puree
- 1 tsp oregano
- 1/2 tsp cayenne pepper
Method
- Preheat the oven to 180c
- Heat the oil in the pan and fry the onion and garlic until they begin to turn soft, then add the pepper and chilli
- Continue to cook down for another couple of minutes, then add the remaining ingredients and stir
- Bring to a boil then transfer to an ovenproof dish. Cook in the oven for 15 minutes and top with anything you like! (Feta, sausages and parsley is what I went for!)
