Do you love a cookie that’s crunchy on the outside and soft and chewy on the inside? Do you also love chocolate AND peanut butter? Well, ladies and gents, this recipe is for you!

Ingredients
- 200g plain flour
- 20g cocoa powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 45g caster sugar
- 100g light brown soft sugar
- 100ml maple syrup
- 65g coconut oil
- 75g peanut butter
- 40ml milk/water
- 100g dark chocolate, chopped
- 30g peanuts, chopped
Method
- Preheat the oven to 180 celcius and line a baking tray with baking paper
- Sift the flour, cocoa powder and bicarbonate of soda onto a large bowl, then add the salt and sugars and mix well
- In a separate bowl, melt the coconut oil then stir in the peanut butter, maple syrup and milk
- Pour the liquid mixture into the flour mixture and stir until a dough forms. Sprinkle in the chocolate and peanuts
- Using your hand, divide the mixture into 9 balls and place on a baking tray, patting down slightly and leaving a few inches between each ball (I had to use 2 trays but if you only have one, cook in 2 batches)
- Bake for 8-10 minutes then remove and allow to cool
- Sprinkle with sea salt flakes and enjoy!
