Nandos style spicy rice


  • 2 tbsp sunflower oil
  • 2 onions, diced
  • 4 cloves of garlic, minced
  • 1 red chilli, chopped
  • 2 peppers, diced
  • 3 small carrots, diced
  • 1 cup frozen peas
  • 2 cups of white rice
  • 2 tsp ground cumin
  • 2 tsp paprika
  • 1 tsp cayenne
  • 3 tsp tumeric
  • 4 cups boiling water
  • 1 vegetable stock cube
  • 3 tomato’s, chopped
  • Juice of 1 lemon


  1. Heat the oil in a deep saucepan and add the onions. Cook for a few minutes then add the garlic and chilli
  2. Once the onions begin to soften add the chopped peppers, carrots and peas. Cook down for a few more minutes until soft
  3. Add the rice and stir for 2 more minutes, then add the cumin, paprika, cayenne and tumeric. Stir until everything is covered then add the stock cube and boiling water. Turn the heat down and simmer
  4. Cook for as long as the rice instructions say, stirring half way through and adding the tomatoes in
  5. Once cooked stir through the lemon juice then enjoy!
