
Ingredients
- 2 tbsp sunflower oil
- 2 onions, diced
- 4 cloves of garlic, minced
- 1 red chilli, chopped
- 2 peppers, diced
- 3 small carrots, diced
- 1 cup frozen peas
- 2 cups of white rice
- 2 tsp ground cumin
- 2 tsp paprika
- 1 tsp cayenne
- 3 tsp tumeric
- 4 cups boiling water
- 1 vegetable stock cube
- 3 tomato’s, chopped
- Juice of 1 lemon
Method
- Heat the oil in a deep saucepan and add the onions. Cook for a few minutes then add the garlic and chilli
- Once the onions begin to soften add the chopped peppers, carrots and peas. Cook down for a few more minutes until soft
- Add the rice and stir for 2 more minutes, then add the cumin, paprika, cayenne and tumeric. Stir until everything is covered then add the stock cube and boiling water. Turn the heat down and simmer
- Cook for as long as the rice instructions say, stirring half way through and adding the tomatoes in
- Once cooked stir through the lemon juice then enjoy!
