Oaty Apple crumble


For the Apple Filling:

  • 1kg (2) Granny Smith Apples, peeled and cubed
  • 100g Brown Sugar
  • 30g Spelt Flour
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp Salt
  • 1 Tbsp Lemon Juice
  • 1 tsp vanilla extract

For the Topping:

  • 125g spelt (or plain) flour
  • *100g Rolled Oats
  • *4 Nairn’s oatcakes
  • 175g brown sugar
  • 1 tsp Ground Cinnamon
  • 175g sunflower spread, melted
  • 1 tsp Vanilla Extract

  1. Preheat the oven to 180c
  2. Add the cubes apples to a bowl and combine with the remaining filling ingredients, making sure all the apple pieces are coated
  3. Transfer the apple mixture to an ovenproof dish and bake whilst you are preparing the crumble topping
  4. Add the flour, oats, oat cakes, brown sugar and cinnamon to the mixing bowl and mix together. Then add in the melted sunflower spread and vanilla and stir in
  5. Remove the apples from the oven and using your hands, spread over the crumble mixture so it completely covers all of the apples
  6. Place in the oven and bake for 45 minutes
  7. Allow to cool slightly for 10 mins and serve!
