Ingredients
For the Apple Filling:
- 1kg (2) Granny Smith Apples, peeled and cubed
- 100g Brown Sugar
- 30g Spelt Flour
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp Salt
- 1 Tbsp Lemon Juice
- 1 tsp vanilla extract
For the Topping:
- 125g spelt (or plain) flour
- *100g Rolled Oats
- *4 Nairn’s oatcakes
- 175g brown sugar
- 1 tsp Ground Cinnamon
- 175g sunflower spread, melted
- 1 tsp Vanilla Extract

Method
- Preheat the oven to 180c
- Add the cubes apples to a bowl and combine with the remaining filling ingredients, making sure all the apple pieces are coated
- Transfer the apple mixture to an ovenproof dish and bake whilst you are preparing the crumble topping
- Add the flour, oats, oat cakes, brown sugar and cinnamon to the mixing bowl and mix together. Then add in the melted sunflower spread and vanilla and stir in
- Remove the apples from the oven and using your hands, spread over the crumble mixture so it completely covers all of the apples
- Place in the oven and bake for 45 minutes
- Allow to cool slightly for 10 mins and serve!
