Spicy Chickpea Salad



  • 1 tin of chickpeas, washed and pat dry
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
  • Salt to taste
  • 1 tbsp olive oil (if roasting) or 1 tsp (if air-frying)
  • 2 inch piece of cucumber, chopped
  • 5 cherry tomatoes, halved
  • 1/2 a small red onion (use 1/4 if a large onion)
  • 1/2 a small chilli, chopped
  • Violife feta cheese to top


  1. If roasting, preheat the oven to 180c and line a baking tray with baking paper
  2. Toss the chickpeas in the paprika, cayenne pepper, garlic powder and salt
  3. Transfer to your baking tray (or air frier) and drizzle over the olive oil
  4. Cook for 20 minutes (if roasting) or 15 (if air-frying), giving them a shake half way
  5. Remove from the oven and allow to cool.
  6. In the meantime, chop your salad veg and place in a bowl. Mix with the chickpeas then top with some crumbled violife feta. Enjoy!
