Ingredients
- 150g pasta
- 1 tbsp olive oil
- 3 garlic cloves, minced
- 2 small red onions, chopped
- 2 handfuls of spinach, washed
- 2 handfuls of kale, washed
- 1 cup of frozen peas, covered with boiling water to defrost
- 500g alpro vegan Greek yogurt
- 1 tbsp nutritional yeast
- 1 tsp garlic powder (optional)
- Salt & pepper to taste
Method
- Cook pasta according to packet instrictions
- Heat the oil in the pan and when hot, add the garlic and onions. Fry for 5 minutes then add the spinach and kale. Cook until the spinach has shrunk
- Add the peas and cook for another minute, then turn the heat down completely and stir in the quark, nutritional yeast and garlic powder
- Add the cooked pasta along with lots of salt and pepper and enjoy!
