Requiring only a few ingredients, this recipe is a winner! It is naturally sweetened by dates, bulked up by oats and the peanut butter does everything in-between. I hope you enjoy these as much as I do!
Ingredients
- 100g dates (I used approx 12)
- 60g oats/oat flour
- 70g peanut butter
- 1 tsp baking powder
- 30ml (2 tbsp) cashew milk (or any other plant-based milk)
- 40g dark chocolate
- 10g peanuts
Method
- Place all ingredients in a blender and blitz until a dough is formed
- Remove from the blender and transfer to the fridge for at least half an hour to stiffen up
- Preheat the oven to 180c and line a baking tray with baking paper
- Roll into 16 balls then use a fork to press them down to create a cookie shape
- Bake for 10-12 minutes then remove and allow them to cool
- Melt chocolate and chop peanuts. Dip each cookie into the melted chocolate then sprinkle with peanuts. Refrigerate for 30 minutes until chocolate sets. Store in an airtight container
