I decided to switch up my banana bread and make slices instead, and I am so pleased with the result! Not only do these have a unique texture, they are great for breakfast. Top them with a little coconut yogurt and nuts and you’re good to go!
Ingredients
- 1 flax egg
- 3 bananas
- 1 tsp apple cider vinegar
- 40g coconut oil
- 60g granulated sugar
- 150ml soya milk
- 130g spelt flour*
- 120g rye flour*
- 1 tsp cinnamon
- 1 tsp ginger
- 1 tsp nutmeg
- 1 tsp baking powder
*can sub for plain/buckwheat/wholemeal flour
Method
- Preheat the oven to 180c and line a baking tray with parchment paper
- In a blender, blend together the flax egg, banana, ACV, coconut oil, sugar and milk
- In a seperate bowl combine the flour, spices and baking powder
- Pour the blender mixture into the flour mixture and stir until combined
- Place into your pre-lined tray and bake for 35 minutes
- Remove from the oven, allow to cool for 10 minutes inside the tray then transfer and cool on a wire rack
