I love a good ol’ hearty meal thats easy to put together, packed with nutrients and full of flavour. I made this recipe up as I was wanting to use up a load of ingredients I had in my fridge, but feel free to play around with it by adding other veggies or using a different noodle type!

Ingredients
- Spray oil
- 1 brown onion, diced
- 2 cloves of garlic, minced
- 1 red chilli, sliced
- 1 tbsp green curry paste
- 1 green pepper, sliced
- 1 courgette, sliced
- 280g block of tofu, cubed
- 400ml veg stock
- 250ml coconut milk (from the tin or made up with creamed coconut)
- 200g broccoli
- 250g udon noodles
Method
- Spray a few sprays of oil in a pan and once heated, add the brown onion, garlic, chilli and curry paste and fry for a few minutes
- Add the green pepper and courgette and fry for a further few minutes, until they begin to soften, then add the tofu and stir for about a minute
- Add the stock and coconut milk, then bring to a boil, add the noodles and broccoli, and cover and simmer for about 5-8 minutes, until the noodles are cooked
- Season to taste
- Serve and enjoy!
