Since I’ve been travelling around Asia, I’ve pretty much been living off noodles. In Bangkok I was having at least one pad Thai every day. Now I’m up in the north, I’ve been trying something called Khao Soi. It’s like a curried noodle soup and is amazing! Although this recipe doesn’t exactly replicate what I’ve been eating, it is worth a go!

Ingredients
Sauce:
- 1 tbsp grated ginger
- 1 clove of garlic, minced
- 1 tsp miso paste
- 1 tbsp hot sauce
- 1 tbsp soy sauce
- 1 tsp liquid sweetener e.g. maple syrup
Noodles:
- 100g noodles
- Spray oil
- 120g firm tofu, diced
- 4 spring onions, chopped
- 1 clove of garlic, minced
- 1 chilli, chopped
- 2 peppers, sliced
- Toppings (optional): peanuts, sesame seeds, corriander, extra spring onion
Method
- Combine sauce ingredients in a small bowl and set aside
- Cook the noodles according to packet instructions. In the meantime, prepare your vegetables. Once noodles are done, drain and set aside
- Over a medium-high heat, fry the spring onions, garlic and chilli for 1-2 minutes then add the peppers
- Fry for a further 3 minutes, stirring regularly, then add the tofu and half of the prepared sauce. Fry until the tofu begins to brown
- Add the noodles along with the remaining sauce and stir to combine. Remove from heat and dish up!
