When the sun is out, salads are an absolute dream meal for me. If you miss the carbs, you can serve with crusty bread, but honestly this one didn’t need anything extra.
Serves: 1
Ingredients
- Spray oil
- 1 slice of violife medeterranian style cheese, cut in half
- 1 bag of salad leaves (I used Sainsburys watercress, spinach and rocket)
- 1/4 of a red onion, thinly sliced
- 5 strawberries, halved
- 1/2 avocado, diced
- 15ml balsamic vinegar
- 1 tbsp mixed seeds (optional)
Method
- Heat a little oil on a griddle pan and add the cheese. Fry on each side for about 5 minutes
- In the meantime, assemble the salad by adding the salad leaves, onion, strawberries and avocado to a bowl
- Top with the griddled cheese, then drizzle over some balsamic vinegar and sprinkle over the mixed seeds
