Vegan Kofta Kebabs

A deliciously easy recipe packed full of exciting flavours! Serve with cous cous, rice or pitta breads, a zesty salad and your favourite dip for a delicious and well balanced meal!

Servings: 2 (small) – 4 (mains)

Ingredients

  • 400g meatless farm mince
  • 20g zhoug paste
  • 1 red chilli, finely chopped
  • 1 large onion, finely chopped
  • 2 garlic cloves, minced
  • 1 handful fresh parsley, finely chopped
  • 4-6 mint leaves (optional), finely chopped
  • 1 tsp ground cumin
  • 1 tsp ground paprika
  • 1 tsp ground corriander
  • Pinch of salt

Method

  1. Preheat oven to 180c and line a baking tray
  2. Combine all ingredients together in a large bowl then roll into sausage shapes with your hands, you should get about 10 in total
  3. Bake in the oven for 30-40 minutes then remove and serve hot (can also be eaten chilled)
