I’m very lucky as there are quite a few market stands/shops selling fruits and vegetables at extremely friendly prices. I picked up 2 plantains for £0.50 which is so so cheap, I’m definitely going to go back! I fried them in a little coconut oil and served with a simple black bean salad, kale and avocado. I hope you enjoy!
Serves: 2
Ingredients:
- 1 tbsp coconut oil
- 1 ripe yellow plantain
- 1 tin black beans
- 150g tin sweetcorn
- 1 red pepper, diced
- 1 red onion, diced
- 1 tbsp corriander, chopped
- 1 avocado, chopped
- 80g kale
- 1 lime
- Optional: pomegranate seeds
Method:
- Preheat the oven to 180c. Heat the coconut oil in a pan and cut the plantain in diagonal slices. Once the oil is hot add to the pan and fry on one side for 5 minutes, then swap and fry on the other side
- Place the plantain on a baking tray then transfer to the oven to cook for about 10 minutes. In the meantime, preoare the salad by combining the black cleans, sweetcorn, red pepper, onion and corriander in a bowl with a little lime juice
- Assemble your plate, adding the kale, avocado and black bean salad, then remove the plantain from the oven and add to your plate. Squeeze a little more lime juice over everything and enjoy!
