Easy Tofu & Quinoa Stirfry

I love a good stir fry. However, despite being easy to make I find that they cam become a little boring. I enjoy adding variety to mine up by adding other grains in place of rice and noodles, such as quinoa like I’ve done here! Also making subtle changes to the sauce and veggie combo is a great way to keep things fun.

  • Cooking spray
  • 180g cooked quinoa (approx 60g dried)
  • 1 block of firm tofu, drained
  • 20g cornflour
  • 1 tbsp soy sauce
  • 1 tbsp hot sauce
  • 1 tbsp ketchup
  • 1 tbsp grated ginger
  • 3 cloves of garlic, minced
  • 1 red onion, sliced
  • 4 spring onions, sliced
  • 1 large red pepper, cut into chunks
  • 80g curly kale
  • Optional: sesame seeds, extra spring onion


  1. Cook quinoa according to packet instructions, usually simmering for 20 minutes
  2. Cut the tofu into cubes an sprinkle over cornflour, making sure each piece is coated
  3. Over a medium-high heat, spray about 5 sprays of oil into a pan, and add the tofu once heated. Flip the tofu after 3-5 minutes, or once it is crispy on one side
  4. In the meantime, combine the soy sauce, hot sauce, ketchup, ginger and garlic to make a sauce
  5. Once the tofu has browned all over, add 2/3 of the sauce to the pan and stir to make sure all of the tofu is coated. Remove from heat and transfer the tofu to a bowl
  6. In the same pan, add a few more sprays of oil then add the red onion and spring onions. Fry on a medium heat for a couple of minutes before adding the pepper.
  7. Once the pepper begins to soften, add the kale and a dash of water. Cover the pan and allow to steam for 2 minutes
  8. Once the kale has steamed in the pan, add the remaining sauce and stir in the tofu
  9. Serve with the quinoa and a sprinkling of sesame seeds
