I didn’t realise I was missing this from my life until I made it. Even typing this recipe up now and having eaten it only a few hours ago, I am craving all over again. This is definitely going to become a breakfast favourite of mine. It’s great for when you’re craving pancakes/waffles but you don’t quite have the time. I used bagels as I had some to hand but regular bread will work wonders too!

Ingredients
- 1 bagel, sliced in half or 2 pieces of bread
- 3 tbsp of aquafaba (if you don’t have aquafaba, sub for 1 flax egg & 2 extra tbsp of mylk)
- 3 tbsp soya mylk (60ml)
- 1 tbsp coconut sugar
- 1/2 tsp cinnamon
- 1/2 tsp vanilla extract
- Coconut spray oil
Method
- Whisk together the aquafaba, milk, sugar, cinnamon and vanilla in a bowl then dunk in the bread/bagels and allow them to soak for a few minutes, turning half way
- Heat a griddle pan or waffle maker and spray with oil. Cook in the waffle maker for about 8 minutes, until brown or in the griddle pan for 4 minutes each side
- Serve with your fav toppings. I used my cinnamon chickpeas, coconut honey, caramelised bananas, peanut butter, cocoa nibs and dessicated coconut
