Harissa in tofu scramble isn’t anything I’ve ever seen or heard of before, and I don’t quite know what posessed me to do it… but it was bloomin’ amazing and I’m never going to go back now!

Ingredients
- Spray oil
- 1 garlic clove, minced or finely chopped
- 1 small red onion, sliced
- 1/2 red chilli, chopped
- 1/4 red pepper, diced
- 50g courgette, diced
- 3 chestnut mushrooms, quartered
- 180g tofu
- 1/2 tsp tumeric
- 1 tsp harissa paste
- 30g kale
- 6 cherry tomatoes, halved
- Salt & pepper to taste
Method
- Heat the oil in a pan and add the garlic, onion and chilli. Fry for a minute before adding the red pepper
- Fry for a few more minutes then add the courgette and mushrooms. Fry until the veg starts to brown, then push the veg to one side, spray a few more sprays of oil and crumble in the tofu
- Sprinkle over the tumeric and add the harissa paste and stir
- Add in the kale and gradually mix together the tofu with the veg. Once everything is combined, add the cherry tomatoes, give it one more stir then serve!
