One Pot Mushroom & Spinach Pasta

Do you know what I love about one pot pasta dishes…? Less washing up and more time saved! I think it’s clear to see by now that I’m a huge fan of mushroom pasta and I’m constantly looking for new recipes. This one is extremely simple yet delicious and nutritious! Make sure you’re able to cover the pan you use (tip: if my frying pan doesn’t have a lid, I’ll cover it with another pan!)

Serves: 1


  • 10 sprays oil (or a small drizzle)
  • 1 medium onion, diced
  • 1 garlic clove, minced
  • 1/2 veg stock cube made with 200ml water
  • 150g mushrooms, chopped
  • 100g pasta
  • 80g spinach
  • 1 tbsp plant milk
  • 1 tbsp nutritional yeast
  • 1 tbsp chopped parsley
  • Salt & pepper to taste


  1. Heat the oil in a pan and fry the onion and garlic for a few minutes. In the meantime make up the stock and set aside
  2. Once the onions have browned a little, add in the mushrooms and fry for about a minute, before adding the pasta and the stock
  3. Stir and cover and allow the pasta to cook for 10 minutes, adding the plant milk and spinach half way through.
  4. Remove the lid and allow most of the water to evaporate. You may need to add a little more water and cover for a bit longer if the pasta isn’t cooked through at this point
  5. Once the pasta is cooked and most of the water has evaporated, stir through the parsley and nutritional yeast then serve in a bowl with plenty of black pepper!
