This is a bit of a random recipe but it works really well and is a great way to add some variety to your tofu.
Serves: 2
Ingredients:
- 200g tofu
- 1 tbsp mild curry powder (mixed with water to make a paste)
- 3 tbsp cornflour
- 1 tsp + 1 tbsp sesame oil
- 1 tbsp minced ginger
- 1 red chilli, chopped
- 2 peppers, sliced
- 1 red onion, sliced
- 8 mushrooms, sliced
- 1 tbsp soy sauce
- 3 spring onions, sliced
Method
- Chop the tofu into blocks and coat with the curry paste. Then toss the tofu in the cornflour
- Heat 1 tsp sesame oil in a pan and add the tofu. Fry until browned all over
- Add the ginger to the pan and fry for 1-2 minutes, then add the chilli, peppers and onion, fry for a couple of minutes before adding the mushrooms. Fry until they start to become soft, then add the remaining sesame oil, soy sauce, spring onions
- Cook for a further minute then serve (I served with jasmine rice and extra greens)
