Tofu & Pepper Stir Fry

This is a bit of a random recipe but it works really well and is a great way to add some variety to your tofu.

Serves: 2


  • 200g tofu
  • 1 tbsp mild curry powder (mixed with water to make a paste)
  • 3 tbsp cornflour
  • 1 tsp + 1 tbsp sesame oil
  • 1 tbsp minced ginger
  • 1 red chilli, chopped
  • 2 peppers, sliced
  • 1 red onion, sliced
  • 8 mushrooms, sliced
  • 1 tbsp soy sauce
  • 3 spring onions, sliced


  1. Chop the tofu into blocks and coat with the curry paste. Then toss the tofu in the cornflour
  2. Heat 1 tsp sesame oil in a pan and add the tofu. Fry until browned all over
  3. Add the ginger to the pan and fry for 1-2 minutes, then add the chilli, peppers and onion, fry for a couple of minutes before adding the mushrooms. Fry until they start to become soft, then add the remaining sesame oil, soy sauce, spring onions
  4. Cook for a further minute then serve (I served with jasmine rice and extra greens)
