3 Ingredient Chocolate Mousse

If I haven’t said this enough times already… don’t throw away the water from your beans. You can make some incredible recipes with it, as aquafaba acts as egg white. If you want a quick and easy recipe that requires no baking, then this is indulgent chocolate mousse is perfect. It makes a yummy dessert and no one would be able to guess that it’s made from the juice from a can of beans! (P.s. I used black bean aquafaba. I was a little worried that it wouldn’t whisk up, but it did and the result was heavenly!)

Serves: 2 (large) or 4 (small)



  • Aquafaba from 1 can of beans (mine was approx 110ml)
  • 100g chocolate
  • 2 tbsp liquid sweetner (I used coconut nectar)
  • Optional: I reccommend using 1/2 tsp of cream of tartare to help whisk up your aquafaba. Lemon juice will also work too


  1. Using an electric mixer, whisk up your aquafaba until it forms stiff peaks. You should be able to tip the bowl over your head with nothing falling out and it takes 10-20 minutes from experience
  2. Melt together the chocolate and sweetner
  3. Gently fold the melted chocolate into the whipped aquafaba, then transfer into small dishes (old Gu pots work great!)
  4. Refridgerate for at least an hour and enjoy!
