Although I live by my buckwheat pancake recipe when it comes to pancakes, I decided to experiment with slightly different ingredients. The result? Delicious, fluffy pancakes that leave the house smelling glorious. It’s hard to say which one I prefer because they are honestly so amazing. You should give them both a try 😉
Servings: 1 (5 medium sized pancakes)
Ingredients

80g 1/2 cup spelt flour

40g (approx 1/2) a ripe banana

1/2 tsp bicarbonate of sofa

1/2 tsp baking powder

15g protein powder / 1/2 scoop

1 tsp chia seeds

1/2 tsp vanilla extract
- 3/4 cup oat milk (or any other plant-based milk)
- Spray coconut oil to fry
Method
- Add all the ingredients to a blender and blend until a smooth batter is formed. Transfer to a measuring jug (for easy pouring)
- Over a medium heat, spray a few sprays of oil and pour in 1/5 of the mixture. Cook on one side until bubbles start to form, then carefully flip over and cook for another 1-2 minutes
- Repeat this step for the remaining batter (Tip: I like to keep my oven on a low heat while I’m doing this and transfer completed pancakes to a baking tray as I go so they don’t get cold!)
- Once you have made all your pancakes, assemble on a plate and top with your favourite toppings!
