Double Chocolate & Cherry Granola

I love having homemade granola at hand. There are so many different flavours and combinations you can create with it – from nutty, to fruity, to seedy to chocolatey – or all! I tend to use a bit of everything, but chocolate is always a must!

Ingredients

  • 200g oats
  • 2 tbsp ground flaxseeds
  • 2 tbsp chia seeds
  • 2 tbsp pumpkin seeds
  • 1 tsp cinnamon
  • 1/4 cup/20g dessicated coconut
  • 60g almonds
  • 10g coconut sugar
  • 2 tbsp/30g coconut oil, melted
  • 3 tbsp/60g coconut honey (or another sticky sweetner)
  • 2 tbsp water
  • 1 tbsp cocoa powder
  • 1 tsp almond extract (optional)
  • 1 tbsp maple syrup
  • 50g dried cherries, chopped
  • 25g dark chocolate chips

Method

  1. Preheat oven to 180c and line a baking tray with parchment paper
  2. In a bowl, combine the oats, flax, chia seeds, pumpkin seeds, cinnamon and dessicated coconut. Set aside
  3. In another bowl, wash almonds, roughly chop then add the coconut sugar so they are all coated. Set aside
  4. Now, combine the melted coconut oil, maple syrup, water, cocoa powder and almond extract and drizzle over the oat mixture. Mix well and transfer to the baking tray. Press down to make sure all ingredients are in one layer and stuck together, then drizzle over an extra tbsp of maple syrup
  5. Bake for 10 minutes, and after this time, remove from oven and sprinkle over the sugared almonds. Pat them down gently into the oat mixture and bake again for 5 minutes
  6. Remove from oven, sprinkle over the dried cherries and return for a further 5 minutes
  7. Now allow the granola to cool completely before breaking it up into clusters and mixing with chocolate chips!
