Fancy some inspo for meat free monday… look no further! This dish is my take on chilli, using meatless farm mince meat, mixed beans and packed with plenty of plants
Servings: 2, generous
Ingredients:
- 1 tbsp oil
- 2 onions, diced
- 1 tsp crushed garlic
- 1 chilli, sliced
- 200g the meatless farm mince
- 1.5 tsp nudespice heady and herby
- 1 pepper, diced
- 1/2 aubergine, diced
- 150g kale &/or spinach
- 1 tin chopped tomatoes
- 1 tin mixed beans, drained
- 1 tsp chilli flakes (optional)
- Salt & pepper to taste
Method:
- Fry the onions, garlic and chilli in oil for a few minutes then add the mince
- Sautee with the seasoning until it begins to brown/cook then add the pepper. Fry for a few minutes before adding the auberine
- Fry again for a few more minutes before adding the kale & spinach. Once it begins to wilt, then add in the chopped tomatoes and beans
- Bring to a boil then simmer for 5 minutes
- Stir through chilli flakes and serve with salad and/or rice!
