Goats cheese and papaya salad

However much I enjoy I carb heavy meal, sometimes I just cannot resist a fresh and fruity salad. Not only is this extremely quick and easy to put together, the croutons can be made in advance and stored in zip lock bag and can be added to other salads too. I made this for myself and my mum and it went down a treat!

Serves: 2


For the salad

  • 1 papaya, peeled and sliced
  • 100g salad leaves
  • 1 inch of goats cheese, sliced into 3-5 pieces
  • 1/2 an avocado, diced

For the croutons

  • 100g focaccia, cubed
  • 1 tbsp chilli oil

For the dressing

  • 2 tsp chilli oil
  • 2 tsp balsamic vinegar


  1. Preheat oven to 200c
  2. Place a frying pan over a medium heat and fry the focaccia. Drizzle over the chilli oil and continue to fry until it begins to brown, then transfer to a baking tray and bake for 7-10 minutes, until crispy. Allow to cool and set aside
  3. Place salad leaves in a bowl. Top with papaya, goats cheese, avocado and croutons
  4. Combine dressing ingredients and drizzle over the salad. Add salt and pepper to taste and enjoy!
