Beetroot & Pea Risotto

This was a quick lunch that I made the other day post-uni. It is such a wonderful meal, and I felt so cosy eating it! I was never really much of a risotto person but they have really grown on me this season.

I topped this one off with some violife greek style cheese (it’s AMAZING)!!!

Serves: 1



  • 1 tsp vitacoco coconut oil
  • 1/2 tsp chopped garlic
  • 1 brown onion, diced
  • 1 large beetroot (plus the liquid – at least 1/4 cup)
