Lemon-Coconut Flapjacks – Vegan

When I say pictures don’t do this justice… I really mean it! These tangy yet sweet lemon flapjack bites are the dream and are a great mid-afternoon pick-me-up!



  • 50g vegan butter – I used this
  • 50g coconut sugar
  • 4 tbsp maple syrup
  • 175g oats
  • 25g dessicated coconut (optional)
  • 1/3 cup lemon curd (see my recipe here)
  • Optional topping: 3 tbsp icing sugar + 1 tsp lemon juice + 1 pinch tumeric (for colour)


  1. Preheat oven to 180c and line a baking tray with parchment paper
  2. On a medium heat, melt coconut butter, sugar and maple syrup until it begins to bubble
  3. In a large bowl, combine the oats, coconut, lemon curd and melted sugar mixture then press into the baking tray and bake for 15-20 minutes
  4. Remove from oven and allow to cool before slicing and drizzing with the icing sugar
