When I say pictures don’t do this justice… I really mean it! These tangy yet sweet lemon flapjack bites are the dream and are a great mid-afternoon pick-me-up!
Ingredients:
- 50g vegan butter – I used this
- 50g coconut sugar
- 4 tbsp maple syrup
- 175g oats
- 25g dessicated coconut (optional)
- 1/3 cup lemon curd (see my recipe here)
- Optional topping: 3 tbsp icing sugar + 1 tsp lemon juice + 1 pinch tumeric (for colour)
Method:
- Preheat oven to 180c and line a baking tray with parchment paper
- On a medium heat, melt coconut butter, sugar and maple syrup until it begins to bubble
- In a large bowl, combine the oats, coconut, lemon curd and melted sugar mixture then press into the baking tray and bake for 15-20 minutes
- Remove from oven and allow to cool before slicing and drizzing with the icing sugar
