Who likes peanut butter and jellyyyyy? MEEEE
These are a delicious, vegan and low sugar alternative to regular thumbprint cookies. You can fill with whatever jam you want, or even peanut butter or chocolate spread! I have a few similar recipes coming your way so keep your eyes peeled!
Serves: Makes approx 12
Ingredients
- 1 cup of oats, blended to a flour
- 1 flax egg (1 tbsp ground flax, 3 tbsp water – set in fridge for 5 minutes minimum)
- 5 tbsp coconut flour
- 1 tsp cinnamon powder
- 1/4 tsp nutmeg
- 1 tsp baking powder
- 2 tsp maple syrup
- 2 tsp coconut oil, melted
- 1 tbsp peanut butter
- 1/4 cup jam of your choice (See my easy chia jam recipe)
Method
- Preheat oven to 180c and line a baking tray with parchment paper
- Combine all ingredients in a blender and pulse until a ‘dough’ ball forms
- Roll out approx 12 balls (about 1 tbsp in size) and flatten on the baking tray
- Form a dent in each cookie with your thumb or the back of a scooped teaspoon
- Bake in oven for 15 minutes
- Allow to cool for a few minutes then top with chia jam
Store in fridge in an air tight container for up to 1 week
