Christmas Spiced Banana Loaf

This is Christmas in loaf-form- cranberries, cinnamon, mixed spice, dried fruits and lots of indulgence, what more could you want?!

Many thanks to Whitworths for lots of the ingredients which were given to me as part of the Share The Love campaign. Many people certainly got to feel the love with this loaf and I will definitely be sharing more in the lead up to Christmas!



  • 3 ripe bananas (250g)
  • 90g buckwheat flour
  • 110g wholewheat flour
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 85g maple syrup
  • 30g chickpea juice (aquafaba)
  • 130g courgette, grated
  • 1 tsp vanilla extract
  • 50g fresh cranberries
  • 20g mixed peel
  • 30g raisins
  • 20g sultanas
  • 15g chopped walnuts
  • Frosting: 3 tbsp (35g) coconut yogurt, heaped half cup (75g) icing powder


  1. Preheat the oven to 180c and grease and line a loaf tin
  2. Mash the banana in a large bowl, then add the flours, cinnamon, nutmeg, baking powder and soda. Stir to combine
  3. Then add the maple syrup, aquafaba, grated courgette and vanilla extract. Stir thoroughly so everything is well mixed
  4. Add in the cranberries, mixed peel, raisins, sultanas and walnuts and fold through
  5. Pour into the pre-lined loaf tin and bake for 45 minutes, or until a knife or skewer comes out clean
  6. In the meantime, combine the yogurt and sift in the icing powder. Stir so there are no lumps and refrigerate
  7. Remove the loaf from the oven and allow to cool in the tin for 10 minutes, then remove from tin and let the loaf cool down to room temperature before adding the frosting
  8. Serve and enjoy!
