Spiced Rum Vegan Mincemeat

Nothing will get you into the Christmas spirit more than making this delicious, booooozy mincemeat. I’m not usually a massive fan of mince pies or mincemeat, but making it my own at home meant I could make it exactly to my taste, plus it was surprisingly easy and therapeutic. I cannot wait to make my own mincepies, keep an eye out! You don’t have to add the alcohol, but it’s a fantastic addition and I highly reccommend it. Also, instead of using of using brandy which is traditionally used,  I decided to switch things up and used spiced rum which worked a treat!

  • 1 large bramley apple, peeled, cored and diced (yeilds approx 180g)
  • 200g raisins
  • 30g mixed peel
  • 20g apricots (cut into small pieces)
  • 30g dried cherries
  • 40g cranberries
  • 40g sultanas
  • 2 tsp cinnamon
  • 1.5 tsp mixed spice
  • 1 tsp nutmeg
  • 1 tsp ginger
  • 1 cinnamon stick
  • 1 bayleaf
  • 1 tbsp coconut sugar
  • 1 orange – the juice and zest
  • 1 lemon – the juize and zest
  • 8 tbsp spiced rum (you can leave this out completely or add more/less to suit your taste)

  1. Combine all ingredients apart from the alcohol in a large pan and simmer for approx 15 minutes
  2. Remove from the heat and allow to cool, then stir through the alcohol
  3. Tightly pack into steralised jars and store at room temperature until you’re ready to use!
