Speedy Spelt Salad

I made this as a quick lunch before I had to dash out of the door again. The spelt I used was already pre-cooked so this only took me 8 minutes to make! You can also use brown rice, pearly barley, giant cous cous, quinoa or bulgar wheat

Serves: 1



  • 80g cooked barley (I used this)
  • Cooking oil spray
  • 1 tsp chopped garlic
  • 1/4 yellow pepper, diced
  • 1/4 green pepper, diced
  • 1/2 chilli, sliced
  • 1 spring onion, chopped
  • 1 large handful of kale
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/4 an avocado
  • 1 tomato, diced
  • Salt & pepper to taste
  • Garnish: chilli flakes, cress


  1. In a large pan, spray a few sprays of oil and sautee the garlic for 1 minute. Add the pepper, chilli and spring onion. Sautee for a couple more minutes
  2. Add the kale along with the garlic powder, paprika and cayenne pepper
  3. Once the kale begins to wilt, stir through the barley and then the tomato
  4. Plate up and top with 1/4 of an avocado, chilli flakes and cress. Enjoy!
