Chocolate Orange Protein Traybake



  • 1 small ripe banana
  • 2 flax eggs (2 tbsp flax to 5 tbsp water, refrigerated for at least 5 mins)
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 50g protein powder
  • 125g plain yogurt
  • 3 tbsp cocoa powder
  • 3 tbsp maple syrup
  • Zest and juice from half an orange
  • 100g oats
  • 50g plain flour
  • 1 small carrot, grated
  • 1 oatein protein bar (for 40% off a £20+ order use code BONNIE40)
  • Optional extras: chopped nuts, goji berries


  1. Preheat oven to 180c and line a baking tray
  2. In a blender, combine banana, flax eggs, baking powder, vanilla extract, protein powder, yogurt, cocoa powder, maple syrup, orange zest and juice and oats (of you don’t have a blender, mix wet ingredients, then dry ingredients, then combine)
  3. Pour mixture into a large bowl and add the carrot and stir until combined
  4. Sift over the flour and fold into the mixture
  5. Pour into the lined baking tray and bake for 5 minutes
  6. In the meantime, chop the protein bar into small pieces
  7. After 5 minutes, add the protein pieces to the top of the traybake, pressing them in slightly so they stick
  8. Return to the oven and bake for a further 10 minutes
  9. Remove from oven, allow to cool completely then slice up and enjoy!

Optional: drizzle over some dark chocolate – I highly recommend this!
