This is one of my favourite weekday meals… not only is it quick and easy, but it’s nutritious, colourful, healthy, filling and packed with plants!! You can serve with noodles, rice, quinoa, barley wheat, bulgar, couscous, a baked sweet potato, OR just as it is! I suggest using
Serves: 2
Ingredients:
- Non stick cooking spray
- 1 tsp chopped garlic
- 1/2 tsp chopped chilli
- 1 brown onion, sliced
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- Vegan meat alternative – I highly reccommend you use these!!
- 3 handfuls of kale
- 1/4 of a red cabbage, sliced
- Salt & pepper to taste
- Optional: 1 tsp light soy sauce, sesame seeds, chilli flakes
- Side of choice – I used this puchased from lidl
Method:
- Spray and heat the pan on a medium high heat
- Add chilli and garlic and cook for 1 minute
- Add onion and cook for a further minute
- Now add the peppers and your meat alternative, cook for 3-4 minutes
- Turn down the heat slightly and add the kale and cabbage and cover pan for 2 more minutes
- Season with salt, pepper and any of the optional extras
- Serve with the side of your choice!
