Chewy Chocolate Chip Tahini Cookies – VEGAN

When I tell you that these are the chewiest, finest and generally the best cookies I have ever made/eaten in my life, I promise you I am not lying! Somehow the tahini works so well in this recipe! What is even better is that this is completely vegan and gluten free, no eggs, milk or butter is required! I’m not going to lie and say I only had one at a time because that simply isn’t possible and once you taste them you will know exactly what I mean.

Serves: 10-12 cookies

Ingredients:

  • 75g coconut sugar
  • 75g light muscovado sugar*
  • 1 tsp coconut oil (room temp)
  • 180g tahini paste
  • 2 tsp vanilla essence
  • 120g coconut flour (you can also use oat, buckwheat etc)
  • 1 tsp baking powder
  • Pinch of salt
  • 1 tbsp water
  • 50g (or more if you wish!) vegan dark chocolate chips  (you can also buy vegan chocolate and chop it up, or substiture for regular chocolate chips)

*you can use 150g coconut sugar or 150g light muscovado sugar alone

Leave at least 2 inches between each cookie – this is an example of what not to do 🙂

Method:

  1. Preheat oven to 180c and line 2-3 baking trays with baking paper
  2. In a large bowl, combine the sugar, coconut oil and tahini and cream together
  3. Add vanilla essence and continue to cream until well combined
  4. Add in the coconut flour, baking powder, salt and water and stir well until everything is combined and it resembles cookie dough
  5. Stir in 2/3 of the chocoate
  6. Using your hands, roll a small handful of cookie dough into a ball and flatten on the lined baking tray, making sure to leave at least 2 inches between each cookie (I put them too close together and they all merged into one which is why they are square looking oops!)
  7. Once you have rolled out all cookies, top them with the remaining chocolate
  8. Place in oven and bake for 10-12 minutes
  9. Once time is up, remove from the oven and allow to cool for 10 minutes
  10. Enjoy warm or store them in the fridge (once cooled and if you even get that far)
