Easy Avocado Breakfast Wraps

Avocado ft spinach & eggs – what an wonderful combination! I made these a while ago and honestly, they are so versatile. You can add many other ingredients such as mushrooms, peppers and tomatoes, and they are a great way of using up left over veg. I like to add plain cottage cheese to my scrambled eggs instead of milk. It makes them richer and creamier with minimal added calories or fat!

Ingredients:

  • 1 large wrap of your choice
  • 1 egg
  • 1 tbsp cottage cheese (optional) or 2 tbsp milk
  • 1/2 tsp butter/ghee
  • Salt & pepper
  • 1 handful of spinach
  • 1/2 an avocado, sliced

Method:

  1. Beat eggs, cottage cheese/milk, salt & pepper together in a bowl
  2. Heat a pan on a medim heat and add the butter, allowing it to melt. Gently pour in the egg mixture
  3. Gently stir the eggs on a medium heat
  4. In the meantime, heat the wrap in a microwave for 20 seconds
  5. Place avocado and spinach slices on the wrap
  6. Continue to stir the eggs until they are cooked through and no visible uncooked egg can be seen
  7. Add the egg over the spinach and avocado and wrap up
  8. Enjoy!
