Avocado ft spinach & eggs – what an wonderful combination! I made these a while ago and honestly, they are so versatile. You can add many other ingredients such as mushrooms, peppers and tomatoes, and they are a great way of using up left over veg. I like to add plain cottage cheese to my scrambled eggs instead of milk. It makes them richer and creamier with minimal added calories or fat!
Ingredients:
- 1 large wrap of your choice
- 1 egg
- 1 tbsp cottage cheese (optional) or 2 tbsp milk
- 1/2 tsp butter/ghee
- Salt & pepper
- 1 handful of spinach
- 1/2 an avocado, sliced
Method:
- Beat eggs, cottage cheese/milk, salt & pepper together in a bowl
- Heat a pan on a medim heat and add the butter, allowing it to melt. Gently pour in the egg mixture
- Gently stir the eggs on a medium heat
- In the meantime, heat the wrap in a microwave for 20 seconds
- Place avocado and spinach slices on the wrap
- Continue to stir the eggs until they are cooked through and no visible uncooked egg can be seen
- Add the egg over the spinach and avocado and wrap up
- Enjoy!
