Nutty Raw Chocolate Date Truffles – VEGAN

If there is one thing that you must make from this blog – it is these. They are so nutty and datey, but rich and indulgent at the same time. The best thing is that they are a no-baker and all you need is a blender!

Ingredients:

  • 100g nuts of your choice (almonds, walnuts, hazelnuts, pecans, brazil nuts – whatever floats ya boat)
  • 200g dates
  • 2 tbsp coconut oil
  • 2 tbsp cocoa powder
  • 2 tbsp nut butter (I use either cashew or almond)
  • Optional: pistachios, cocoa nibs, coconut flakes for dusting)

Method:

  1. First, whizz up the nuts in a food processor until they form a paste
  2. Add the dates (without the pips!), whizz again
  3. Add everything else, whizz again
  4. Once a thick paste has formed, turn the blender off and roll the mixture into balls
  5. Place on a tray and refrigerate for 3 hours until set
  6. Enjoy!
