Kale, Carrot & Red Cabbage Slaw

This recipe is a great ‘healthy’ version of regular coleslaw. I recon over half the calories have been cut out as I’ve substituted the creamy mayo dressing with a tangy apple cider dressing. It keeps in the fridge for up to 3 days and can be made in less than 10 minutes. Try serving with my harissa cauliflower and roasted vegetable cous cous.

Ingredients:

For the salad:

  • 1/2 red cabbage, thinly sliced
  • 1 large carrot, grated
  • 1 generous handful of curly kale
  • 3 spring onions, chopped

For the dressing:

  • 1 tsp dijon mustard
  • 1 garlic clove, minced
  • 1 tbsp extra virgin olive oil
  • 1 tbsp apple cider vinegar
  • 1 lemon, juiced
  • 1/2 tsp honey
  • 1/4 tsp chilli powder
  • Salt & pepper

Here I simply served with steamed broccoli, cous cous, tomatoes and half an avocado *drool*

Method:

  1. Prepare salad ingredients & toss into a large bowl
  2. Mix together dresssing ingredients
  3. Drizzle dressing over salad
  4. DONE!
