This recipe is a great ‘healthy’ version of regular coleslaw. I recon over half the calories have been cut out as I’ve substituted the creamy mayo dressing with a tangy apple cider dressing. It keeps in the fridge for up to 3 days and can be made in less than 10 minutes. Try serving with my harissa cauliflower and roasted vegetable cous cous.
Ingredients:
For the salad:
- 1/2 red cabbage, thinly sliced
- 1 large carrot, grated
- 1 generous handful of curly kale
- 3 spring onions, chopped
For the dressing:
- 1 tsp dijon mustard
- 1 garlic clove, minced
- 1 tbsp extra virgin olive oil
- 1 tbsp apple cider vinegar
- 1 lemon, juiced
- 1/2 tsp honey
- 1/4 tsp chilli powder
- Salt & pepper

Here I simply served with steamed broccoli, cous cous, tomatoes and half an avocado *drool*
Method:
- Prepare salad ingredients & toss into a large bowl
- Mix together dresssing ingredients
- Drizzle dressing over salad
- DONE!
