One of my fav post workout meals – sometimes I omit the broccoli and cook the mushrooms alone. If you are super hungry, serve with avocado toast for the best brunch ever!
Ingredients:
- 1 tsp coconut oil
- 1 tbsp chopped garlic
- 1 chopped onion (red or white)
- 10 mushrooms (or as many as you want!)
- 200g tenderstem broccoli
- 5g/ 1 tbsp nutritional yeast (game changer)
- Salt, pepper, chilli, garlic powder to taste
Method:
- Add coconut oil to the pan on a medium heat
- Add the garlic and onion and sautée for 3 mins on high
- Add mushrooms and broccoli to separate sides of the pan
- Stir broccoli so it cooks on all sides and only stir mushrooms after 3 mins
- After about 6 mins add nutritional yeast mix in with contents of the pan
- Add garlic powder, salt, pepper to taste
- Stir and cook for a couple more mins then plateeee up. Add lotsaaaaaa chilli
