Garlicy Sauteed Mushroom & Broccoli – VEGAN

One of my fav post workout meals – sometimes I omit the broccoli and cook the mushrooms alone. If you are super hungry, serve with avocado toast for the best brunch ever!

Ingredients:

  • 1 tsp coconut oil
  • 1 tbsp chopped garlic
  • 1 chopped onion (red or white)
  • 10 mushrooms (or as many as you want!)
  • 200g tenderstem broccoli
  • 5g/ 1 tbsp nutritional yeast (game changer)
  • Salt, pepper, chilli, garlic powder to taste

Method:

  1. Add coconut oil to the pan on a medium heat
  2. Add the garlic and onion and sautée for 3 mins on high
  3. Add mushrooms and broccoli to separate sides of the pan
  4. Stir broccoli so it cooks on all sides and only stir mushrooms after 3 mins
  5. After about 6 mins add nutritional yeast mix in with contents of the pan
  6. Add garlic powder, salt, pepper to taste
  7. Stir and cook for a couple more mins then plateeee up. Add lotsaaaaaa chilli
