Garlicy Mushrooms, Avocado Toast & Sauteed Spinach – VEGAN

If you love garlic, mushrooms and avocado – this is for you! A very cheap, easy and nutritious brunch.

Ingredients:

  • 1 piece of bread of your choice
  • 1/2 an avocado, mashed
  • 1/2 tsp garlic powder and salt
  • 100g spinach
  • 1 tsp coconut oil/ any spray oil
  • 10 chestnut mushrooms, sliced
  • 1 small red onion, chopped
  • 1 tsp crushed garlic
  • 1 tbsp nutritional yeast
  • 1 tsp garlic powder
  • Chilli, salt & pepper to taste

Method:

  1. Heat some of the oil in a pan and add the red onions and garlic
  2. Sautee for 2-3 mins and add the mushrooms, stir only occasionally
  3. Meanwhile, add the remaining oil to another pan and sautee the spinach
  4. Add garlic powder & salt to avocado and mash
  5. Toast the bread and spread over the avocado
  6. Add nutritional yeast and garlic powder to onion and mushroom and cook for a further 2-3 mins
  7. Plate up and enjoy!
