If you love garlic, mushrooms and avocado – this is for you! A very cheap, easy and nutritious brunch.
Ingredients:
- 1 piece of bread of your choice
- 1/2 an avocado, mashed
- 1/2 tsp garlic powder and salt
- 100g spinach
- 1 tsp coconut oil/ any spray oil
- 10 chestnut mushrooms, sliced
- 1 small red onion, chopped
- 1 tsp crushed garlic
- 1 tbsp nutritional yeast
- 1 tsp garlic powder
- Chilli, salt & pepper to taste
Method:
- Heat some of the oil in a pan and add the red onions and garlic
- Sautee for 2-3 mins and add the mushrooms, stir only occasionally
- Meanwhile, add the remaining oil to another pan and sautee the spinach
- Add garlic powder & salt to avocado and mash
- Toast the bread and spread over the avocado
- Add nutritional yeast and garlic powder to onion and mushroom and cook for a further 2-3 mins
- Plate up and enjoy!
