So creamy, so rich, so delish – NO CREAM waaaaah? I made this recipe a while ago and it is way too good to not upload.
Ingredients:
- 2 tbsp olive oil
- 3 skinless, boneless chicken thighs (I like to cut off ALL the fat), diced
- 1 pack of mushrooms , sliced
- 3 tbsp ghee/butter
- 3 tbsp flour
- 1/2 large/1 medium onion, diced
- 1 chilli, chopped
- 4 cloves of garlic chopped
- 1 cup of frozen spinach, thawed and roughly chopped
- 1.5 cups of orzo
- 3 cups chicken stock
- 1 cup milk (any, I used whole)
- Salt & pepper to taste
- Chopped parsley and parmesan (optional)
Method:
- Wash and dice the chicken then fry in the olive oil until brown & cooked thorough
- Remove from pan leaving as much oil as possible, add mushrooms and cook until soft
- Remove mushrooms and keep aside with the chicken
- Add ghee/butter to the pan and allow to heat – add onion, chilli and garlic and cook until onions are translucent
- Add flour to the pan and stir into the butter
- Slowly add the stock and milk, whisking to incorporate into the butter-flour mixture
- Add orzo and cover on a low heat for 10 mins
- Remove cover, stir through, add salt, pepper, chicken, mushrooms and spinach
- Add parsley (if using) and parmesan
- I like to put in an ovenproof dish, sprinkle with parmesan and bake for 10-15 mins – so yum! Easily reheated in a microwave also!
